These delicious no-bake energy balls are packed with nutrients thank to superfoods like goji berries and cacao.
Goji Berry Balls
Ingredients
- 200 g Emy Pitted Dates
- 60 g Emy Raw Cashew
- 100gr Emy dried Goji Berries
- 50gr Emy Cacao Nibs / Emy Dark Choc Chip
- 1 tsp vanilla extract, optional
Instructions
- Soak Emy Pitted Dates in hot water for 15mins to soften.
- Place all ingredients in a food processor and mix into a thick, sticky dough you can easily press together between your fingers. If it’s not sticking, add 1 tsp of warm water and process again.
- Roll into 10-12 balls and store in a sealed container in the fridge for up to 2 weeks or freeze for up to 2 months.
